Organic Vegetable Plants

Onions grow well in organic soil and home gardens.

A home garden is a wonderful way to gain more of an appreciation for your favorite vegetables by growing the plants yourself. The garden will also give you the chance to try new vegetables, and since you're growing the food on your own, you can cultivate organic plants. There are several vegetables that grow well free of pesticides, and will enhance your family's food options without the use of harsh chemicals. Does this Spark an idea?

Globe Artichoke

The globe artichoke is a thistle plant that grows to be about 3 feet tall. The plants grow best in moist but cool climates, and are popular in California and Oregon, according to Oregon State University. The university also asserts that it may be best to start growing the vegetables from seed indoors at the end of winter or beginning of spring, and transfer them into your home garden after the final frost of the year. Artichokes need nutrient-rich organic soil, and seeds should be planted deep, in an area of your garden where the plants will receive full sun.

Onion

Onions are commonly grown in home gardens, and are an ideal choice because they keep well weeks after being harvested. The vegetable can also tolerate a number of weather conditions, and can withstand frost. Common onion types grown organically at home include the White Sweet Spanish and Yellow Sweet Spanish onions, according to Ohio State University. Onions need well-drained organic soil to thrive, as well as healthy amounts of organic matter. If you have especially heavy or loamy soil in your yard, the Ohio State University Department of Horticulture recommends using lots of organic matter to improve the soils drainage and aeration qualities.

Arugula

Arugula is part of the Brassicaceae or mustard family, and tastes slightly spicy and bitter like a mustard green. The plant has a quick maturation date -- no more than 50 days, according to Oregon State University. Arugula, also called Rocket Salad was used in ancient times by Egyptians and Romans, who considered it an aphrodisiac, according to Rain.org. Moist, well-composted organic soil is ideal for growing arugula, and the leaves of the plant develop a stronger flavor as the weather gets warmer, although it is a cool season plant. When arugula grows between 8 and 10 inches tall, it is ready to harvest.

Anaheim Chili Pepper

The Anaheim chili pepper, also called the California chili, has a milder flavor than other chilies, making it ideal for seasoning various foods. The fruits are about 7 inches long, and takes about 115 days to mature to a rich green color, according to the University of Florida. After about 150 days, the peppers will turn red. It's a good idea to start the chili pepper seeds indoors in the middle of April, and transfer them to your home garden at the end of May, according to Colorado State University. The fruits need vitamin-dense organic soil, and it's important not to over-water the chilies.
