Homemade Fruit Leather
Natural fruit roll-ups are a nutritious choice for a child's party. You can use applesauce, apples, plums or apricots. Puree the fruit adding cinnamon, vanilla or mint for a different taste. Mix in a tablespoon of lemon juice to keep the finished fruit snack from turning brown. Line a cookie sheet with wax or parchment paper. Pour the puree on the paper. It should be approximately 1/4-1/8 of an inch thick. Place in a pre-heated 130 degree oven for as long as 24 hours. The time it takes depends on the humidity in the air.
Banana Ice Cream Sundaes
Cut the top off of oranges - one for each guest. Hollow out oranges, saving the pulp. Set the oranges in a cupcake pan. Peel bananas and then cut into small chunks. Set on waxed paper and freeze until firm. Place the chunks in a blender and add nonfat milk until it is creamy. Add orange pulp, grape juice, or cranberry juice for flavor and color if desired.
Fill the orange cups with banana ice cream, put a cherry on top and set in the freezer until ready to serve.
Frozen Banana-pops
Peel bananas, cut in half. Stick on a Popsicle stick. Cover the bananas with softened peanut butter. Roll in cereal or chopped nuts.
Place on waxed paper and then put them in the freezer for several hours.
Nutritious Snack Art
Children can build their own nutritious snack when you set out the materials. Let them choose the base of their snack art, such as apple rounds, lettuce leaves, zucchini or cucumber rounds. On top of this they can spread a layer of peanut butter, cream cheese, yogurt or ranch dressing. Now they are ready to decorate with seeds, raisins, frozen peas or nuts. Suggest they design a car, monster, flower or landscape scene.
Kababs
Chunks of fruit, vegetables or cheese can be placed on skewers in any combination. Poke the finished kabobs in a hollowed out melon or coconut as a party table centerpiece as well as a healthy snack. If you are making these for younger children, use lollipop sticks that you can find in a craft store. Pretzel sticks are another idea for the kabob base.
